Valentine's Day for the Single person = Snickerdoodles for All

My post the other night on solo's doing something nice for someone else or themselves for V-Day inspired me to take my own advise.

Yesterday, I got out of bed early and got my kick boxing on with P90x. After my serious sweat fest, where I was literally dripping sweat at the end of the work out dvd, I wore a nice sweater and packed myself a great lunch. At work I tried my best to not stress out too much and roll with the punches. After my sewing class (I knocked out my pj pants), I went home and snuggled up with some tea and snickerdoodles.

I have to admit, I am not the biggest cookie lover. Cookies are just okay for me. I never made cookies, like ever, but I decided to do something different and make some for my coworkers.

I got this recipe from Angela's amazing blog, Oh She Glows. Her snickerdoodle recipe is vegan and absolutely delicious. I used less Earth Balance to reduce the fat even more but follow the recipe exactly if you like.

I made these cookies a bit more special by rolling them in pink sugar. Aw, aren't they cute?

My coworkers were really touched by the simple and delicious gesture. I really enjoy doing things for other people so baking up a batch of cookies and adding in a candy stick for good measure was the icing on the cake.

You know, I never actually knew what snickerdoodles were. I had heard of them but somehow associated them with the candy bar. These look far more delicious.
