Below is an interview I had with Lindsay on her new book and inspiration.

Interview:
1) What was your favorite city you visited and was it plant-based
friendly?
I'm not sure that I have a favorite -- I guess it would depend on what I
was looking for... a city that I loved, and happened to have a lot of vegan
options, or the city with the best vegan fare, but was not necessarily a city I
loved, etc.
2) What was the most plant-friendly city you
visited?
I think this too depends on what you're looking for. Berlin, for example,
has an all-vegan supermarket, which you can't really beat, but then there were
other cities -- and countries, that on the whole, I found to be more
plant-friendly than Berlin. Due to the nature of Italian cuisine, it was a
breeze being plant-based in Italy. I also had some of the best vegan food in my
life in other parts of Germany (like Hamburg), even though the city itself
wasn't as plant-friendly as other cities I visited...
3) How was this book different in writing than your other
two?
It's very personal. In addition to the international "theme" I've included
stories of my travel and life.
4) Did you encounter any different ingredients on your travels that you
incorporated in your new cookbook?
I don't like to use foreign or exotic ingredients in my cookbooks -- I
try to focus on everyday ingredients we all have in our
pantry.
5) If you had to live on 1
food for a year, what would it be and why?
Potatoes. They're so versatile.

I would love the chance to win! I need some new recipes!
I had a hard time being plant-based in Italy! I think it's because I didn't know what to look for since I was a newbie vegetarian and ended up eating bread and egg dishes.
I love to try the recipes in this book by the way the interview is excellent.
